Gola Kabab




Ingredients:
Mince ½ kg

Raw papaya 1 tbsp

Ginger garlic paste 1 tbsp

Chilli powder 1 tsp heaped

Salt 1 tsp

Garam masala 1 tsp

Green chilies 5 (grinded)

Onion 1 (grinded) medium

Nutmeg ¼ tsp (grinded)

Mace ¼ tsp (grinded)


Cooking Directions:

Put mince in a chopper with raw papaya, ginger garlic paste, chilli powder, salt, allspice, green chilies, onion, nutmeg, mace and green cardamom.

Chopperized till smooth.

Leave the mince to marinate for 2 hour in the fridge.

Put on square skewers and BBQ. or fry

Skinny Pizza


Ingredients

Chicken drumsticks 2
Yogurt 4 tbsp
Garlic paste 1 tsp
Lemon juice 3 tbsp
Black pepper powder ½ tsp
Red chili powder 1 tsp
Turmeric powder ½ tsp
All spice powder ½ tsp
Yellow food color a pinch
Oil 1 tbsp
Salt as required

For Pizza Dough:
White flour ½ kg
Yeast 1 sachet
Sugar 1 tsp
Baking powder 1 tbsp
Oil 3 tbsp
Salt as required
For Topping:
onion 1
Capsicum 1
Tomatoes 1
Black olives ½ cup
Mozzarella cheese 300 gm (grated)
Pizza sauce 1 cup
Oregano ½ tsp
Butter as required
swiss cheese optional

Cooking Directions:

1)Make a slit on each drumstick.
2)Make the marinade by mixing the yogurt, black pepper, lemon juice, yellow food color, red chili powder, garlic paste, turmeric powder and all spice powder together.
3)Pour the marinade over the chicken pieces and leave for marination.
4)Grease a microwave proof tray and place the marinated chicken drumsticks on it.
5)Heat in a microwave on convection for 12 minutes.
6)The chicken  is ready.

For Pizza Dough:

1)To prepare the dough mix together lukewarm water with yeast and sugar.
2)Leave aside for 15 minutes.
3)Add salt, baking powder, oil and the prepared yeast mixture to the white flour.
4)Knead till smooth dough in formed and leave aside for 3 – 4 minutes.
5)Knead again and with the help of a rolling pin roll out the dough.

Aalu k Samosay (Potato Samosa)


Ingredients
Flour ½ kg
Oil 10 grams
Carom ½ tsp
Cumin seeds ½ tsp
Salt as required
For Filling:
Potato ½ kg
Oil 3 tbsp
Salt as required
Red chili powder 1 tbsp
Turmeric ½ tsp
Green coriander ¼ bunch
Cumin seeds 1 tbsp
Oil for frying
Onion 1 (finely chopped)
Green chili 6
Mint leaves ¼ bunch
Coriander 1 tbsp (chopped)

Cooking Directions:
First of all in a dish add flour and mix all the ingredients into flour and knead.
Leave it for 15 minutes.
For Filling: Boil potatoes and mash finely.
In a frying pan heat 3 tbsp oil and add onion, coriander, salt, red chili powder, turmeric and cumin seeds. Cook and sauté.
Add Potato along with green chili, coriander and mint, mix well and turn off the flame.
After this make small paira from the kneaded flour and fill the filling into the paira and seal.
Deep fry in a wok.
Delicious Aalo kay Samosay is ready to serve.

Kofta Biryani


Ingredients

Ingredients for kofta:

Mince ½ kg
All spice powder 1 tsp
Poppy seeds 1 ½ tsp
Desiccated coconut 1 tbsp
Roasted gram 1 tbsp
Onion raw grinded 1
Ginger garlic paste 1 ½ tsp
Salt 1 tsp
Chili powder 1 tsp
Yogurt 1 tbsp
Bread 1 sliced
Coriander leaves chopped 2 tbsp
Green chillies chopped 2

Ingredients for masala:

Oil ½ cup
Ginger garlic paste 1 ½ tsp
Chilli powder 1 ½ tsp
Coriander powder 1 ½ tsp
Onion brown and grinded ½ cups
Salt 1 tsp
Whole spices powder ½ tsp
Roasted cumin crushed 1 tsp
Tomatoes blended ½ cup

Ingredients for yogurt mixture:

Yogurt 1 ½ cup
Yellow colour pinch
Kewra water 1 tsp
Green cardamom powder ¼ tsp
Mace ¼ tsp
Nut Meg ¼ tsp
Coriander leaves 2 tbsp
Mint leaves 2 tbsp
Dried plums 8
Rice ½ kg
Salt 2 tbsp
Whole spices mixed 1 tbsp
Black cumin ½ tsp
Bay leaf 1

Cooking Directions
